Fresh Summer Salad
The food that we ate in Costa Rica was as fresh as can be. A lot of our fruit was pulled straight from a tree, and the milk came straight from the cow milked that morning. My friend Jonathan used that milk to make us yogurt and cheese. Here he is chopping coconuts for us followed by a picture of his cheese. I already miss the food, as well as Jonathan and all of my other friends in Costa Rica.
Knowing that my garden was in full production made it slightly easier to come home. Well, to be honest, it did not really make me want to come home at all. I only came back because I was expected to bring my students home. Otherwise I might still be in Costa Rica. However, since I had to return, I can at least appreciate that it is not winter when there are no fresh fruits or vegetables here.
My first meal back at home was a simple but tasty one. It started off with freshly picked lettuce.
The tomatoes are just starting to ripen. While the larger tomatoes need a little more time, I was able to pick some cherry tomatoes to add to the green beans and snow peas.
It was a simple but tasty salad.
For a dressing I mixed a white lemon balsamic with olive oil. Douglas cooked sausages and heated up some sour kraut. I love summer eating!
I am excited for the rest of the tomatoes to ripen.
Soon we will also have squash and cucumbers. They are in bloom right now.
The jalapeños and cayenne peppers are almost ready to eat as well.
There are also two bunches of grapes on the vines, and the sweet potatoes are growing well.

I just hope that no one steals our grapes before we pick them. Someone stole the loofah I grew on that trellis last year.

I forget the names of those tomatoes. They are an experiment. I hope that they are tasty. Will let you know as soon as they are fully ripe.
